Salmon and Salad - YUM!

Quiet dinner at home for 2 - grilled Salmon Fillet with a Caper Mayo sauce and Arugula Salad with Blueberries.  Fast, Easy and Delicious.

Salad dressing :

1 Tbsp olive oil
2 Tbsp mango wine vinegar
I tsp Russian Mustard
I garlic clove, grated

Mix all ingredients together and toss with salad.





Arugula Salad with Fresh Blueberries, Toasted Pecans and Red Onion.

Toast Pecan pieces (300 degree oven for about 5 minutes - watch they don't burn!), thinly sliced red onions and toss with washed arugula and fresh blueberries...



Make a simple caper sauce for the salmon by mixing the juice of half a lemon with a heaping spoon of Mayo and about 2 tsp of caper berries roughly chopped...


 

Prepare Salmon for grilling by washing, drying well and a spritz of olive oil over the fillets.  Salt'n'pepper...cook on a hot grill.   I  use a George Foreman grill -you  need less oil, get the great grill marks, ready in 5 minutes or so.  Couldn't be simpler.  Serve with a crisp glass of wine and voila - dinner is ready in about 30 minutes....
