Banana Pecan Muffins


Hi - I'm finally back - new stove installed and virus removed from my laptop (thanks to my sister, Connie who was given a muffin in gratitude!)  Getting used to cooking with electric instead of gas so expect some disasters...not these muffins however.  This is a great recipe.

Ingredients

2 cups mashed banana
1/3 cup melted margarine
1 egg beaten
1 tsp vanilla
1 1/2 c all purpose flour
1/2 c sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2/3 c chopped pecans



Preheat oven to 350.  Melt margarine in the microwave and add to vanilla, egg and banana in the mixer.  I used 4 bananas today and make sure they are very ripe and quite soft.  Use the paddle attachment to mash the bananas.



Next mix the dry ingredients together except the pecans and pour into the Kitchenaid and mix quickly just until incorporated. Then fold in the  pecans.


Line muffin tin with paper cups and using an ice cream scoop, scoop out 12 muffins from the  batter.


Bake for 20 minutes...
